Baking conversions look complicated at first because there are several unit systems in play at once. Most confusion comes from mixing these up rather than the math itself.

Two Categories of Measurement

The starting point is understanding that volume and weight are different kinds of measurement. Cups, tablespoons, and teaspoons all measure volume — how much space an ingredient takes up. Grams, ounces, and pounds measure weight — how heavy it is.

US volume (cups, tablespoons), US weight (ounces, pounds), and metric weight (grams, kilograms) can all appear in the same recipe, which is where most conversion confusion starts.

When You Need a Density Value

For a fixed volume, weight changes based on the ingredient. This is why there's no single 'cups to grams' formula that works for everything. Each ingredient needs its own density value, typically expressed as grams per cup — every ingredient page on this site lists its exact figure.

When You Just Need a Fixed Multiplier

Volume-to-volume and weight-to-weight conversions, on the other hand, are always fixed. A cup is always 16 tablespoons. A pound is always 453.6 grams. These conversions don't depend on what you're measuring.

The One Practical Rule to Remember

Rule of thumb

If you're converting between two volume units or two weight units, the math is simple multiplication or division by a fixed number. If you're converting between a volume unit and a weight unit, you need the ingredient's density.
